10-Minute Chia Seed Jam

I've been having some major sweet tooth attacks and I wanted to make something fruity and sweet but not overly sugary. That's when I ran into this recipe for agave/maple syrup sweetened jam made with chia seeds. Chia seeds are awesome! They are high in fiber and omega-3's plus they have a bit of protein in them. Win win win! Needless to say I got right to it! It's super quick and easy and even little Evelyn even liked it!!! Woohoo! I love that it's not packed with sugar and she loved that it's well...bread with jam! You can adjust the syrup how you see fit and try it with almost any fruit. I made strawberry here and I'll be making blueberry once this one is gone. Hope you love it as much as my family does.




Ingredients:

2 cups fresh or frozen fruit of choice

2 tbsp chia seeds

1 tbsp lemon juice

1-2 tbsp agave or maple syrup


Method:

Heat up berries in a saucepan over medium-high heat. Stirring frequently until fruit breaks down. You may need to use your spoon or a masher to smash up the fruit. Once it's broken down, stir in the chia seeds and lemon juice. Remove from heat and add syrup of choice. Let cool for a couple minutes and then enjoy! Adjust syrup as needed.


Makes: 4 servings


**Reminder: this doesn't have any preservatives in it so it won't last as long as store bought jam.
