This high protein low in fat dish is great if you are HUNGRY! It's high in volume for how low it is in calories. Winning! It works well for meal prepping as it doesn't get soggy when reheated. I use a product called "Right Rice" to keep the carbs on the lower end and increase the protein a bit more but you can always swap in regular white or brown rice. That being said, I highly recommend Right Rice. It's delicious and quick and easy to make. The carb count is fairly high for this one but it also has a ton of fiber so don't be discouraged. It's the RIGHT carbs. :)
Ingredients:
2 medium carrots sliced
1/2 head of cauliflower cut in florets
Olive oil spray
1/2 tsp ground coriander
sat & pepper to taste
1 pouch Super Bean Mix (or one can chickpeas)
1/2 tsp ground cumin
1 1/2 cup cooked Right Rice (or white/brown rice)
3 sprigs fresh cilantro roughly chopped
Method:
Preheat oven to 410 degrees and line baking sheet with paper.
Toss carrots and cauliflower in a bowl with olive oil spray, coriander, salt, and pepper. Arrange on 1/2 of baking tray, roast for 15 minutes.
Toss beans in a bowl with olive oil spray, cumin, salt, and pepper. Add to the other 1/2 of baking tray and cook for 10 minutes more.
Divide vegetables, beans, and rice between 2 bowls and top with cilantro.
