Easy Vegan Protein Pancakes

Boy oh boy do I LOVE pancakes. They are quick, easy, and oh so delicious. I have several recipes for vegan protein pancakes but this is one of my favorites. You can swap out the AP flour for any flour of your choice. I've used oat, millet, and buckwheat with great success but there's also something nice about using AP flour from time to time. It's light and fluffy and gives you what you want from pancakes. That being said there are healthier choices out there so maybe do 50/50 or trade off between a "healthy" whole grain flour and AP flour. It's about balance! My favorite part about this recipe in particular is the protein powder. LivBody makes AMAZING flavored protein powders that take these pancakes up a notch. I typically go for Cinnamon Cookie Crumble and Iced Oatmeal Cookie. Oh so good! For the recipe below I used Cinnamon Cookie Crumble but you can swap it out for another flavor. Vanilla or Cake Batter makes a great pancake flavor too!



Ingredients:

1 cup all purpose flour

1 scoop LivBody Cinnamon Cookie Crumble protein powder (or other flavor)

2 tbsp stevia or maple syrup

1 tsp ground cinnamon (or other flavor add in if desired)

1/2 tsp salt

1 tbsp baking powder

1 cup water + more if needed


Method:

Combine all dry ingredients in a bowl and mix. Add water starting with 1 cup and adding more only if needed to achieve a batter consistency.


Cook on a griddle for 1-2 minutes or until bubbles appear. Flip and cook 1-2 more minutes. Top with butter and maple syrup and you got yourself a yummy breakfast!
