Notella – A Healthier Hazelnut Chocolate Spread

If you love Nutella but want a healthier alternative with less sugar and oil, this homemade Notella is for you! It’s just as rich and chocolaty, but with cleaner ingredients and no preservatives. Plus, it's vegan! Perfect for spreading on rice cakes, oatmeal, bread, or whatever your heart desires. Let’s dive into the recipe.

Ingredients:

  • 3 1/2 cups (450g) raw hazelnuts

  • 3 tablespoons cocoa powder

  • 1 tablespoon sweetener of choice (I used baking stevia)

  • 1/2 teaspoon salt

  • 1 tablespoon coconut oil


Instructions:

  1. Bake the Hazelnuts: Preheat your oven to 350°F. Spread the raw hazelnuts on a baking sheet and bake for 12 minutes.

  2. Remove the Skins: Once baked, bundle the hazelnuts in a clean kitchen towel and rub them to remove the skins. I show how to do this step in the video!

  3. Process the Nuts: Add the hazelnuts to a food processor and blend until they reach a smooth, nut butter consistency.

  4. Add Cocoa, Sweetener & Salt: Add in the cocoa powder, sweetener, and salt. Continue processing until everything is well combined.

  5. Add the Coconut Oil: Finally, add the coconut oil to prevent separation, and blend one last time.

  6. Cool and Store: Transfer your Notella to a glass container. Allow it to cool completely before sealing the jar.
